Got his service training at Novikov Restaurant Group (Moscow): from waiter to senior waiter, then manager.
Bar training came from BAF and Bulvar (Chișinău): from bar-back to bar manager. Beyond those two, went through four more bar projects in Chișinău — names withheld under NDA.
In Moldova, moved from floor host to General Manager across Atypic, Daily Dose, Brut — and several other restaurant projects over recent years, names withheld for the same reason.
Currently working with Group MIMI on two active properties — Castel Mimi and Hotel Mimi — and leading the launch of a new restaurant, DIVA.
≈ 20,000 hours of operations
Floor, kitchen viewed from management (not the burners), back office. In this industry, experience is measured in hours, not years. I was never a cook — I spent hours upon hours next to chefs: briefs, specs, plate reviews. What's in this document is distilled from those hours, not from books.
Specific numbers on specific places are under NDA. This document contains no exact revenue or margin figures. It contains industry benchmarks and timelines — enough for the method to be usable.
If this document landed for you — chances are we're wired similarly. HoReCa isn't the only thing I'm working on.
In parallel — a clothing brand and an AI tool for working with yourself. Three directions, one premise: system beats chaos.
In clothing — through quality standards and numbering. In AI — through memory structure. In consulting — through method. If you want to see what else I invest time in — three cards below. If not — close it. Thanks for reading.
For those who hear "we don't wear that here" and understand: that means we should. A streetwear-sport hybrid assembled the same way a restaurant system is — by standard, not by inspiration. Every piece numbered by hand. Small runs, local production. If you wear FENOMEN — you're not part of a mass, you're one of a few hundred people worldwide with the same number.
View on Instagram →Architect builds the structure. Shadow asks the uncomfortable questions you don't ask yourself. An attempt to turn conversation with AI into a long-term instrument — one that remembers you months later and works in the background, not "on demand." Not a store — a filter. To buy, you pass an onboarding test. Not everyone reaches checkout — and that's correct.
Take the onboarding →If you have a restaurant and you read this document to the end — you have a sense of how deep the audit goes. 5 days inside your operations (kitchen, service, bar, financial control) + 5 days of recommendations with specific numbers and timelines. Not a "30-minute call" and not a 50-slide deck. I take 1–2 projects per month, no more. If there's a queue — there's a queue.
Request audit →An updated edition arrives in 2027 — with what worked through 2026 and fresh cases. No newsletter, no spam. One email when the document ships.
